Philly Time!

Nothing gets me wobblin’ like a decent philly.
I’ll go so far as to say there is no such thing as a bad philly.
They’s all good!

Now, I have my preferences like anybody else, but regardless, I’d never turn a philly down. Ever.

In my dream universe a philly starts out on a full size sub wheat roll thats been buttered and toasted just so.

Then, more than a necessary amount of theenly sliced ribeye browned in cast iron with just a hint of W sauce.

This is where I part ways with some folks because they are picky asses.
I demand stoutly sliced green and red bell peppers, yellow onions, and shrooms. You read that right. SHROOMS. If the philly don’t have shrooms I won’t be as happy as I would be with em. There, got that controversial part out of my craw.

Next, that perfectly toasted sub roll must receive a generous slathering of mayo from stem to stern. I’ve never seen a philly with too much mayo.

The ribeye, peppers, onions and SHROOMS are then spread thickly and evenly from one end of that roll to the other. Stack it tall! A very liberal policy of provolone cheese gets layed out all over that thing. Then under the broiler fire for however long it takes to get that cheese melted as it should be.

If prepared properly, when you stab your teefs in that delight the bottom of that toasted roll should crumble all over the front of your shirt and the juices will be running down both arms and dripping off your elbows onto big dinner plates on the floor that the cats and dogs will be kung fu fighting over.

A properly prepared philly will require the possessor to take a 2 hour nap afterward and then a steamy shower to get the philly smell off of ya. Then you’ll be ready for a big slab of keylime pie!

I likes me sum philly and I readily admit I haven’t had one in a long time, probably 2 years or more. But right now I’m jonesin’ like 4 mf.

I’d like to design, build, and run a traditional Irish Pub.
I’d be one of three bartenders on hand and the pub capacity would be no more than 30 people max. Standard irish pub grub. Live music on Fri and Sat. Open 11-11 7 days a week.

The first 15 years we lived here turkeys were a common element in the yard year round. I’ve seen then in groups of 20 or more. The past few years they’ve been vacant.

They are very alert and will see you before you see them. But you can hear them at a distance. You’ll hear em before you see em.

I’ve played with the idea of getting one of those see-thru blinds you sit on the ground, then go sit in it in the woods with a camera and a bottle of joose. Throw a couple bags of corn around the area. See what happens.
